I'm trying to start my day with a more heartier breakfast rather than just downing a cup of coffee or two. I try to make Tyler oatmeal a few times a week but I never eat it myself which is silly considering I'm already going through the trouble of making oatmeal on the stove.
I don't buy the pre-packaged stuff. Too much sugar and other things that I can't pronounce. Convenient, yes but the stuff out of the canister is so much more tastier and you can control how much sugar goes into it not to mention getting creative with the toppings.
Tyler's usual preference is golden raisins, apples and cinnamon. I don't like raisins so I came up with my own concoction. Coconut milk and strawberries….mmmm….this version is really decadent and satisfying.
Basically you want to follow the directions on the back of the canister but rather than water or milk, substitute coconut milk. I actually go half coconut milk, half water. I add in a little vanilla, honey and cinnamon while it's bubbling away. When it's done, I top with fresh strawberries and a little more honey (and sometimes a little touch of heavy cream. I know, I know but it's soooo good).
A bowl of this and I'm ready to start my day and I don't feel starved by lunchtime. That is always my demise.
